Driftless Trading Post at Sylvan Brewing

     In 2023 we partnered with Sylvan Brewing to bring our farm-to-table kitchen to Lanesboro, MN. Sylvan Brewing is fast becoming one of the best brewery destinations in the region. Being built in an old wood-stacked granary, the fit could not be more perfect to continue growing our local food business. We are operating out of a food truck for the 2023 season while a permanent kitchen is under construction to provide year-round food options inside Sylvan Brewing. 

 

    Our menu consists exclusively of locally produced products. As small farmers ourselves, we are trying to build an avenue for local products to be viable. We raise our own beef 15 miles away in Rushford and feed our cattle spent grain from Sylvan Brewing out on our pasture. We keep our circle small and gather the remaining products from farmers we've gotten to know over the years. We pride ourselves on going nose-to-tail with whole animals and so far, cooking burgers and BBQ does just that. 

 

     We have developed a robust supply of local foods over the years of building small food businesses. This has allowed us to attain a vast array of products, enough to start a restaurant! The farmers and producers that make this all happen are:
